Sheet Pan Chicken Fajitas

These Sheet Pan Chicken Fajitas are an easy dinner meal to toss in the oven on a busy weekday or a relaxing weekend. My blend of taco seasoning make the flavor exceptional and they are made with ingredients that you can feel good about giving your family.


RECIPE Sheet Pan Chicken Fajitas

Easy Dinner With Lots of Flavor!


Ingredients

1 lb organic chicken tenderloins or chicken breasts

3 bell peppers (mix and match colors)

3 large cloves garlic (minced)

1 whole onion (chopped)

1 TBSP sea salt

2 TBSP avocado/olive oil


Toppings (optional)

Shredded cheese

Sour cream

Guacamole



Preparation

  1. Preheat your oven to 425 degrees

  2. Place a piece of parchment paper on a large baking sheet pan

  3. Start by chopping your peppers, and onion. Add this to a large bowl and mince your garlic in as well.

  4. Now cut your chicken up into medium strips so they will fit nicely in your tacos. Add to the bowl

  5. Add your seasonings and oil and toss to combine. Make sure everything is coated in the seasoning well, so that it’s flavored nicely.

  6. Place mixture onto your sheet pan and cook in the oven for 25 minutes or until veggies are slightly browned and chicken is cooked all the way through.

  7. Add your fajita mixture to tortillas, lettuce, wraps or just enjoy as is! You’re going to love it, enjoy!

*Use organic ingredients when feasible



Tips

I always like to make this into a double batch if I have time. That way we can eat one batch and then throw another batch into some gallon Ziploc bags and toss it into the freezer. If we ever need a quick meal or I’m not feeling like cooking I can just let it thaw on my counter and then reheat it on your sheet pan again. It’s so easy!!
