Chicken Cordon Bleu Casserole

A delicious Chicken Cordon Bleu Casserole that you can put together in minutes. The flavors are delicious, and it feeds a crowd!

I've always loved a good Chicken Cordon Bleu, especially the cream sauce that goes with it. It's true comfort food for me. Well, today you are in for a treat because this tastes just like it but in casserole form! It comes together quickly and your whole dinner table will love it.


Chicken Cordon Bleu Casserole



Ingredients

  • 3 cups cooked and shredded chicken (about 3-4 chicken breasts)

  • 1 package (uncured) ham, I like the Applegate brand-it’s very clean without nitrates added

  • 2 cups shredded white cheddar cheese

  • 3 cups Dijon cream sauce (see recipe below)

  • 2 cups breadcrumbs (you can make your own or just take a package of croutons and throw them in a blender, so they are like crumbs)

  • 2 cups cooked rice-I like using white organic basmati or jasmine rice


Dijon Cream Sauce

  • 3 TBSP butter

  • 3 TBSP all-purpose flour

  • 1 ½ C organic whole milk

  • 2 TBSP Dijon mustard

  • 3 TBSP parmesan cheese

  • ½ tsp dried thyme

  • Salt and pepper as needed


Preparation:


  1. Preheat your oven to 375 degrees

  2. Cook your rice, so it can be cooking while you prepare the chicken/ham mixture. On the stove add 4 cups water or broth to a sauce pan. Add your2 cups of rice, cook on medium/high until it comes to a boil. Then turn down the heat to low and cover with a lid. Cook until the rice is tender, it's about 10-15 minutes. If using brown rice you will need to cook for about 45 minutes.

  3. Now you can cook your chicken breasts and let them cool a little, shred up the chicken breasts into pieces. Make your cream sauce.

  4. To make the cream sauce add butter to a saucepan until melted, add flour and simmer for a few seconds. Then add your whole milk slowly and let it get thick and creamy. Add your dijon mustard, parmesan cheese, thyme, and salt and pepper as needed. Stir until it’s all mixed together and gets bubbly. But don’t let it boil, If your sauce is too thick then add some chicken stock to it to thin it out.

  5. Take your ham and cut into pieces or squares

  6. In a 9 by 13 pan add your rice to the bottom of the pan, then your chicken, and then your ham together. Add the cheese on top and then pour all of the Dijon cream sauce on top.

  7. Add your breadcrumbs on top, then put into the oven and bake for about 20-30 minutes or until bubbly. Enjoy!


*You can serve this on its own without rice if you want to.
