
RECIPE Cauliflower Alfredo Sauce
Ingredients
1 whole head of cauliflower
3-4 whole cloves of garlic minced or crushed
2 Tbsp melted butter
2 Tbsp heavy cream or coconut cream
1/2 tsp salt (more to taste)
1/4 tsp black pepper
Preparation
Start by washing your cauliflower head, and letting it dry or dry with a paper towel.
Cut up the cauliflower head into pieces. Get a large pot of boiling water ready to cook the cauliflower in. Place cauliflower pieces in the boiling water and let cook until the cauliflower is soft. If you can stick a fork into the cauliflower easily then it is ready.
While the cauliflower is cooking cut up your garlic cloves and melt your butter. I like to cook the crushed garlic in the butter so it browns it a little bit. Set aside until the cauliflower head is cooked.
Once your cauliflower head is cooked, place in a high speed blender with your butter and garlic, heavy cream, salt and pepper. Blend on high speed until smooth. Add more salt to taste or as needed.
Add on top of your favorite pasta or meat.
I like to cook pasta, then add zucchini and chicken. Then add my sauce on top of that to make a casserole. Add a little cheese as well and cook in your oven just until the cheese melts. Enjoy!
Tips
*Use organic ingredients when feasible
*You can also cook your cauliflower in your Instant Pot. Just place 1 cup of water in your Instant Pot with the head of cauliflower. Set to manual (high pressure) for 2-3 minutes, and let it naturally release for 5 minutes. Then move the knob to venting and release the rest of the steam. Follow the rest of the steps above
