Chinese Chicken Salad

Chinese Chicken Salad: This salad will please your palate well. It's so good, and every time I make it my family eats it within minutes, even my kids!

"Yum mom! This salad is so good!"

What my kids said the first time I made this salad. I was saying it to myself as well but my kids ate all of it! In my personal opinion the salad dressing is the best part but all the flavors pair so well together, It is just a pop of Asian flavor in your mouth! It's the perfect combo of sweet and salty, and there are so many fresh vegetables-romaine, spinach, carrots, cucumber, cabbage, the list goes on!


Chinese Chicken Salad


Ingredients



Salad:

  • 1 head of romaine lettuce (washed and chopped)

  • 3-4 handfuls of spinach (washed and chopped)

  • 1/2 a head of cabbage (chopped)- green or purple cabbage gives the salad a nice color

  • 1 cup of shredded carrots

  • 1 full cucumber (washed and sliced into small pieces)

  • 2 full green onions-both the white and the green part

  • 2 chicken breasts (cooked and shredded)

  • 3-4 mandarin oranges

  • 1/3 c sliced almonds for crunch

Dressing:

  • 1/4 c avocado oil

  • 2 TBSP soy sauce

  • 2 TBSP coconut sugar

  • 2 TBSP rice vinegar or apple cider vinegar

  • 2 TBSP lemon juice

  • A knob of ginger-grated

  • 1 clove of garlic-grated

  • 2 tsp sesame oil

  • pinch of red pepper flakes for a little heat

Directions:

  1. First prep all your vegetables by washing thoroughly and drying-I like to use a lettuce spinner to get the excess water and moisture off the greens, as much as possible. The place the greens in a large bowl.

  2. Add your carrots, green onions, cabbage, and cucumber

  3. Add your shredded chicken. I like to cook my chicken in the instant pot and then shred it with a hand mixer, it works like a charm. But use whatever method you like for cooking the chicken.

  4. Last add your mandarin oranges and sliced almonds to the bowl. Toss to combine.

For the Dressing:

To make the dressing just toss all of the ingredients into a high speed blender and blend until combined. Wait to pour the dressing on the salad when it's ready to serve. You don't want to put the dressing on before you serve as it will make everything soggy as it sits.
