Grain-Free Zucchini Fritters With A Tomatillo Ranch Dipping Sauce

I have loved finding new ways to use up my garden zucchini this year. The has been my favorite so far, it makes for a light snack or an easy lunch. These Zucchini Fritters don't have any refined flours and are loaded with lots of other fresh veggies from the garden. The Tomatillo Ranch Dipping Sauce is made just a handful of ingredients and of coarse, some green tomatillo's. Together the flavors create an amazing dish that you can make over and over again. RECIPE Grain-Free Zucchini Fritters With A Tomatillo Ranch Dipping Sauce


Ingredients


Zucchini Fritters

2 c shredded zucchini (squeeze extra liquid out with a towel)

1 c shredded carrots

2 cloves of minced garlic

¼ c shredded cheese

⅔ c almond flour

2 TBSP arrowroot flour

½ tsp onion powder

1 jalapeno diced

2 eggs

¾ tsp sea salt

Sprinkle of pepper


Tomatillo Ranch Dipping Sauce

1 c mayo

¾ c full fat sour cream

4 medium sized tomatillo’s

Handful of cilantro

1 clove of garlic

Splash of lime juice

Sprinkle of salt

1 jalapeno


Preparation

  1. Shred and dice all of your veggies in a bowl. Then add almond flour, cheese, arrowroot powder and all your spices. Add your eggs last then mix all together until incorporated.

  2. Shape into small patties, and cook on medium/high heat in a cast iron skillet.

  3. Flip the fritters every 2-3 minutes or until browned thoroughly on both sides. These fritters are packed with flavor and lots of fresh veggies, enjoy!


For the Tomatillo Ranch Dipping Sauce just add all the ingredients into a high speed blender. Blend until all incorporated and thick. Chill if you prefer and enjoy!
