RECIPE Spelt Dinner Rolls
4 c organic spelt flour
2 tsp active dry yeast
2 tsp sea salt
2 TBSP avocado oil
2 TBSP honey
1 1/2 c warm water
In a bowl or stand mixer add your warm water, honey and yeast. Let it sit for 5 minutes so the yeast can bloom.
Add your salt, and oil, give it a little mix. Then start adding your flour. One cup at a time. Once all the flour is in the bowl mix and knead the dough for 3-5 minutes on low speed or by hand.
Let the dough rest in a warm place for 2 hours covered.
After two hours punch down the dough and shape into 12 pieces.
Preheat the oven to 430 degrees
Place the rolls on a cookie sheet with parchment paper. Let the rolls rise for another 1½ hours, or doubled in size.
Spray the tops with oil or butter before placing them in the oven.
Cook for 14-15 minutes, then remove from the oven and let cool for about 15 minutes. Then enjoy!
