
RECIPE Brussels Sprouts & Kale Salad
Ingredients
1 (32 oz pkg) organic Brussels sprouts-washed & dried
1 c chopped organic kale
½ c dried cranberries
½ c sliced almonds
½ c Parmesan cheese or feta cheese
¾ c chopped bacon (optional)
Dressing
½ c avocado oil
Juice from ½ a lemon
¼ tsp salt
1-2 cloves of minced garlic
2 tsp mustard
1 TBSP apple cider vinegar
Preparation
Start by taking your washed Brussels Sprouts and cut the end off, then place them in a food processor and process until they are shredded. Now move to a bigger bowl to add the other ingredients
Add your kale, cranberries, almonds, cheese, and bacon (optional)
In a separate bowl add your all the ingredients for your dressing, mix together than add to the Brussels Sprouts. Mix and enjoy!
