Chocolate Chip Cookies (No refined flour or sugar)

Chocolate chip cookies are my all time favorite cookie, they take me back to my childhood. I loved making them for any occasion. Those soft, buttery cookies with little nuggets of chocolate chips, a soft center and crispy edges. I can taste it every time I think about it.


I created this recipe so that I could remove any refined flours or sugars, and make them healthier than the classic, original chocolate chip cookie. I have made this recipe over and over and by far this has been the best replica of the classic chocolate chip cookie. It's just as easy to make as the original, just swap a few ingredients and you've made some of the best cookies you'll ever have! RECIPE Chocolate Chip Cookies (No refined flour or sugar)


Ingredients

1 stick butter (softened)

1/2 c +1 TBSP maple sugar

1 egg

1 tsp vanilla

1 tsp baking powder

¼ tsp sea salt


Preparation

  1. Preheat the oven to 350 degrees.

  2. In a bowl of a stand-mixer add butter and maple sugar. Mix until light and fluffy and mixed thoroughly.

  3. Add your egg and vanilla, then mix.

  4. In a separate bowl mix almond flour, baking soda, and sea salt. Add the dry ingredients to your wet ingredients, mix until incorporated.

  5. Add your chocolate chips by hand. Use a cookie scoop to form a ball, about a tablespoon each. Place on your cookie sheet and flatten slightly with your fingers. You want to flatten them with your fingers because they won’t spread much in the oven.

  6. Bake for 10-12 minutes, then remove and let cool for 10 minutes. Move to a wire rack. Yields: 16-18 cookies


*Use organic ingredients when feasible


*Add a few chocolate chips to the top of the cookie right before baking, it makes them look prettier!
