Cinnamon Rolls (Grain-Free, Gluten-Free, Sugar-Free)

I always crave a good cinnamon roll, these will be your new favorite guilt-free recipe. They are grain-free, gluten-free and sugar-free so you can feel good about eating them, they are made with wholesome ingredients like almond flour, coconut flour and monkfruit sweetener. These are my new go-to recipe whenever I want a treat! They will keep you full, and won't leave you feeling bloated after eating one. These are a special treat!






RECIPE Cinnamon Rolls (grain-free, gluten-free, sugar-free)


Ready in 35 minutes

Serves 8-10 people


Ingredients


Dough

3 c finely ground almond flour

1 TBSP coconut flour

½ tsp active dry yeast

½ tsp baking soda

½ tsp salt

5 tbsp arrowroot starch

3 TBSP melted butter or coconut oil

1 TBSP avocado oil

2 eggs

1 tsp vanilla


Filling

1 TBSP cinnamon

¼ tsp nutmeg

⅓ c butter (softened)


Cream Cheese Frosting (sugar-free)

1 (8 oz pkg) cream cheese frosting

2 tsp vanilla

1-2 TBSP heavy cream


Preparation

  1. Preheat the oven to 350 degrees

  2. Start by making your dough, add almond flour, coconut flour, yeast, baking soda, and salt to a large bowl and mix until combined.

  3. Add monkfruit sweetener, arrowroot starch, butter, oil, eggs, and vanilla. Combine until a dough forms. Make a ball with the dough. Then refrigerate for 20 mins.

  4. After the 20 mins take out of the fridge and roll the dough out with a rolling pin. Use one piece of parchment paper on the bottom and one on the top, this will help prevent any sticking. Sprinkle arrowroot starch on dough if needed as well to prevent any sticking.

  5. Roll out about ½ inch thick. Then spread your softened butter on it.

  6. Combine cinnamon, nutmeg and golden monkfruit sweetener and sprinkle on top of the butter.

  7. Now start rolling up into a log, use your parchment paper to help hold the roll together. Refrigerate for another 20 mins.

  8. Take out of fridge and cut into about 10 or 11 cinnamon rolls.

  9. Place on a baking pan with parchment paper.

  10. Cook for 25-30 minutes or until the rolls are firm. While cooking make your frosting.

  11. Combine cream cheese, powdered monkfruit sweetener, vanilla and heavy cream in your stand-mixer together until you get a frosting. Slowly add your heavy cream a little at a time so it’s not too runny.

  12. Once the cinnamon rolls get out of the oven frost immediately, and now you have delicious, hot, cinnamon rolls with a sugar-free cream cheese frosting. Enjoy!

*Use organic ingredients when feasible


TIPS

The dough will be quite different than traditional cinnamon rolls, it is a bit more sticky and harder to handle but it is possible if you use your parchment paper correctly and can sprinkle arrowroot powder generously.
