Chocolate Banana Pancake Skewers (Gluten-Free & Sugar-Free)

My kids love eating pancakes and we wanted to change it up a bit so one morning we made them chocolate flavored and put them onto wooden skewers. My kids thought they were the so fun and ate every bite! Sometimes the way that we present food to our kids will help them to eat things they might be unfamiliar with or haven't tried before.


We love these pancakes! They are made with minimal ingredients you probably have on hand already and you can add your favorite fruits to them so that you have a great breakfast food! I used oat flour, and monkfruit sweetener to make them gluten free and sugar-free, but use ingredients that are already in your pantry. You can also cut up the pancakes and fruit into fun shapes and now you have a learning experience and an eating experience!




RECIPE Chocolate Banana Pancake Skewers



Ingredients

  • 3 eggs

  • 1 extra ripe banana

  • 1 c milk of choice (I used coconut milk)

  • 1 c flour of choice (I used oat flour, see *tips)

  • 1/4 c cocoa powder

  • 1 tsp vanilla

  • 4 TBSP melted butter

  • 1 tsp baking powder

  • Pinch of salt


Preparation

  1. Put all of the ingredients into a high speed blender and blend until smooth.

  2. Prepare your pan on the stove top, turn to medium high heat and add oil or butter so the pancakes don’t stick. Cook until you see bubbles form on top, then flip the pancake.

  3. Cut up your favorite fruits and place how you like on a wooden skewer. Enjoy!



Tips:

*You can use any flour you’d like, all purpose, whole wheat, or your favorite gluten-free flour blend. I used rolled oats which will turn into oat flour when you pulse in your blender.


*Can also use maple syrup or honey in place of the monkfruit sweetener, use only 1/4 c if you make that swap


*Use organic ingredients when feasible
