Cherry Chocolate Nut Bars
2 cups of chopped nuts of choice (I used walnuts & almonds-but use any kind you like)
1/4 c dried cherries (no added sugar) chopped
2 Tbsp. peanut butter-or any nut butter
1/3 c almond flour (heaping)
1/3 c honey
1 tsp vanilla extract
1/4 shredded coconut
1/3 c chocolate chips- I used the lily’s brand
Pinch of salt
Preheat oven to 325 degrees
Place parchment paper in a 8 by 8 pan
In a mixing bowl combine all ingredients. Add the chocolate chips last. Mix until incorporated together well.
Put mixture into the 8 by 8 pan and flatten out as best as you can. Sprinkle with a little shredded coconut if you want for the top.
Place in the oven, and bake for 20-25 minutes, then remove from the oven and let cool
Now place in the refrigerator for at least 4 hours or overnight. Don’t skip this step. This is what makes the bars chewy. They are so good, enjoy!
*I bought the dried cherries that are sweetened with apple juice. Try to avoid the other ones, they are drenched in added sugar.
