Cherry Chocolate Nut Bars

Cherry Chocolate Nut Bars


  • 2 cups of chopped nuts of choice (I used walnuts & almonds-but use any kind you like)

  • 1/4 c dried cherries (no added sugar) chopped

  • 2 Tbsp. peanut butter-or any nut butter

  • 1/3 c almond flour (heaping)

  • 1/3 c honey

  • 1 tsp vanilla extract

  • 1/4 shredded coconut

  • 1/3 c chocolate chips- I used the lily’s brand

  • Pinch of salt


  1. Preheat oven to 325 degrees

  2. Place parchment paper in a 8 by 8 pan

  3. In a mixing bowl combine all ingredients. Add the chocolate chips last. Mix until incorporated together well.

  4. Put mixture into the 8 by 8 pan and flatten out as best as you can. Sprinkle with a little shredded coconut if you want for the top.

  5. Place in the oven, and bake for 20-25 minutes, then remove from the oven and let cool

  6. Now place in the refrigerator for at least 4 hours or overnight. Don’t skip this step. This is what makes the bars chewy. They are so good, enjoy!


*I bought the dried cherries that are sweetened with apple juice. Try to avoid the other ones, they are drenched in added sugar.

*Use organic ingredients when feasible
