
RECIPE Very Vanilla Baked Donuts
Ingredients:
Donut Batter:
2 c organic all purpose flour or any grain flour of choice
3/4 c organic coconut sugar or maple sugar
2 tsp baking powder
1 tsp sea salt
1 1/2 tsp vanilla bean powder (optional)
3/4 c coconut milk or milk of choice
2 eggs
1/2 c avocado oil
1 Tbsp vanilla
Glaze:
1 Tbsp cornstarch
1 Tbsp heavy cream
1 Tbsp almond milk
1/2 tsp vanilla
1/4 tsp vanilla bean powder (optional)
Preparation
Preheat the oven to 425 degrees and grease your donut pan with oil or butter so the donuts don’t stick
Combine all your dry ingredients. Flour, coconut sugar, baking powder, salt and vanilla bean powder.
In a separate bowl combine your wet ingredients. Milk, eggs, vanilla, and oil. Mix well and add to your dry ingredients. Mix to incorporate but don’t over mix.
Pour your batter into a large ziploc bag for piping. I find this is the easiest and cleanest way to get the batter into the donut pans.
Cut the corner of the bag and pipe batter into the donut pans.
Bake for 7-8, then remove from the oven . Remove donuts from the pans after 5 minutes, place on a cooling rack. Let them completely cool before glazing.
To make the glaze combine all the ingredients into a bowl and mix until it’s a thick paste. You don’t want it to be too thick, but you don’t want it to thin either. Get the right consistency and then when you donuts are cool dip the tops into the glaze. Decorate with anything else that sounds good, I used some lavender flowers from my garden to decorate them but use whatever you have on hand, and enjoy!
