RECIPE Vanilla Orange Cupcakes
1 stick of butter (room temperature)
3/4 c maple sugar or coconut sugar
1 tsp vanilla
1 1/2 c flour (use any kind you like)
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
1/2 c Greek yogurt or sour cream
1/3 c orange juice
1-2 tbsp. orange zest
5 drops of orange essential oil (optional) or use 1 tsp orange extract
2 sticks (1 cup) of salted butter (room temperature)
4 oz. cream cheese
1 1/2 tbsp. vanilla extract
1-2 tsp orange zest
5-6 drops of orange essential oil or 1 tsp orange extract
Start preheating your oven to 350 degrees. Line a 12 cup muffin tin plate with parchment liners.
In a bowl mix with a hand mixer or stand mixer your butter, maple sugar and egg. Mix until all incorporated.. Add your vanilla.
In a separate bowl mix your flour, baking powder, baking soda, salt, and nutmeg. Then add your dry ingredients to your wet ingredients. Mix until incorporated all together.
Add your Greek yogurt and orange juice, orange zest and orange essential oils. Mix until incorporated.
Fill your cupcake liners evenly with batter and cook for about 22 minutes. Top will fluff up in the oven and then spring down after they are removed from the oven and cooled.
Let them cool completely before adding the frosting.
To make the frosting add your butter, cream cheese, and powdered monkfruit together first. Then add your vanilla extract, orange zest and orange essential oils. Mix until incorporated. If the frosting is too thick add 1-2 tsp of milk of cream if needed. Pipe the frosting onto the cupcakes. Add a little remaining orange zest at the end to make it look pretty. I also added a little bit of orange slice to the cupcakes but that is definitely optional.
