Sugar-Free Creme Brulee


Creme Brulee is a rich, creamy, decadent dessert that can seem overwhelming and difficult to replicate. In my recipe I removed all the added sugar and it still had with the same soft smooth, rich texture and flavor without all the guilt. This dessert would be great for any holiday or a "just because" dessert.



RECIPE

Sugar-Free Creme Brulee

Serves 4 people


Ingredients

2 c organic heavy cream

5 egg yolks

Pinch of salt


Preparation

  1. Preheat oven to 325 degrees

  2. Prepare 4 ramekins on a baking sheet, you will be doing a water bath for these so prepare some boiling water (just enough to fill the baking pan half full)

  3. Add your heavy cream, and 3 TBSP Classic monkfruit sweetener to a saucepan on medium heat.

  4. Scrape your vanilla bean and add to the mixture. Let the mixture get hot and bubble slightly around the edges but don’t let it come to a boil.

  5. In a stand mixer add your egg yolks and 1 TBSP + 2 tsp Lakanto Classic monkfruit sweetener, and pinch of salt. Blend until the egg yolks become a light yellow color.

  6. Once your heavy cream mixture is ready then add small amounts (1 TBSP at a time) to your egg yolk mixture. You don’t want the eggs to curdle so just add the milk mixture slowly. Once you’ve added about a cup you can just pour the remaining mixture into the stand mixer.

  7. Take the mixture and pour it through a mesh strainer. Then pour it into your ramekins

  8. Put your ramekins on a baking pan and put them into the oven, then take your boiling water and pour it into the pan until it is about half full. It helps to have a water kettle for this step.

  9. Don’t skip this step, the water bath is important to help the creme brulee cook evenly.

  10. Cook for about 30 minutes or until the middle is set and jiggly. The tops will be slightly brown as well.

  11. After they have cooled for about 30 minutes then place them in the fridge to set for 4-6 hours or overnight.

  12. Once they have set in the fridge you can take them out, sprinkle the monkfruit powdered sweetener on top, 1 TBSP per ramekin, then with your kitchen torch brown the tops of the creme brulee. If you don't own a kitchen torch you can just use the broil setting on your oven for 2 minutes, watch them carefully because they can easily burn. Now your ready to eat! Enjoy
