Honey Marshmallows (Refined Sugar-Free)





RECIPE Honey Marshmallows



Ingredients

  • 1 c water (divided)

  • 3 Tbsp grass-fed gelatin

  • 1 c honey

  • 2 tsp vanilla

  • Arrowroot powder for sprinkling

  • 1/4 c (heaping) cocoa powder for chocolate marshmallows

Preparation

  1. Prepare an 8 by 8 pan with parchment paper. Sprinkle with a little bit of arrowroot powder on the bottom so the marshmallows don’t stick so much.

  2. In your stand mixer start by taking 1/2 cup of water and add your gelatin to it, mix and let the mixture “bloom” for a few minutes. Make your honey mixture while you wait.

  3. In a small pan on medium heat add your honey, and 1/2 cup water. Keep on the heat until a candy thermometer reads 240 degrees. Once it reaches 240 degrees take off the heat and add to your stand mixer with the gelatin in it.

  4. Mix on medium speed for 8-10 minutes. The mixture will go from a light brown to white.

  5. Once the mixture turns white (usually after about 4-5 minutes) add your vanilla, and if your making chocolate marshmallows add your heaping 1/4 cup of cocoa powder.

  6. After 8-10 minutes pour the mixture will have a glossy finish and is ready to place in your pan.

  7. Pour the mixture into your prepared pan, you may need to do this fast as it can set up fast.

  8. Sprinkle the top with more arrowroot powder, and let it set for 8-10 hours or overnight on the counter top. Cut into squares in the morning. Make your favorite s'mores or eat them plain! They are so good!!


Tips

*Use organic ingredients when feasible


*It’s best to use a candy thermometer to make sure you reach 240 degrees
