Easy Stuffed Eggs aka. "deviled eggs"

I use to think that these delicious stuffed eggs were just for Easter (we make them then too) but this recipe is now a staple at our house. They are so creamy, made with organic, pasture-raised eggs, mixed with my homemade mayonnaise recipe, and a few fresh spices and herbs. I love to top them with fresh dill from my garden and a pinch of paprika for a spicy sweet flavor. These are can be customizable to your palate, make them spicy, or sweet, add whatever spices you like to give them a special touch. Your family is sure to love them!





RECIPE Easy Stuffed Eggs aka. "Deviled Eggs"


Ingredients

6 hard boiled eggs (peeled)

Yolks removed

3 TBSP mayonnaise

1 tsp mustard

Pinch of paprika

Pinch of fresh dill leaves

Pinch of salt

Pinch of pepper

Small pinch of garlic powder (optional)



Preparation

  1. Start by peeling your hard boiled eggs, usually if you run them under warm water while peeling they come out better. The eggs usually come out better if they are also refrigerated for a few hours before making these.

  2. Cut the eggs in half lengthwise and remove the yolks, add them to a separate bowl.

  3. When the yolks are all separated mash them up, then add the mayonnaise, (use this recipe) mustard, salt, pepper and garlic powder. Mix until incorporated

  4. If you want them to look pretty then pipe them into a piper bag and pipe into the egg whites. Sprinkle with a little paprika and fresh dill for color and flavor

  5. Let refrigerate for a few hours or consume right away, they won’t last long! Enjoy

*Use organic ingredients when feasible



Tips

*Using fresh herbs makes a huge difference for flavor! I love using fresh dill from my garden for this one, but use what you have on hand!


*Double the recipe if needed, I usually make a small batch and my family eats them all in one day, 6 eggs makes 12 deviled eggs
