Banana Walnut Bars (Gluten-Free & Naturally Sweetened)






RECIPE Banana Walnut Bars




Ingredients

  • 5 c quick oats

  • 1 c chopped walnuts + ¼ c for topping

  • 1/3 c honey

  • 1/4 c maple sugar or coconut sugar

  • 1 c shredded coconut

  • 1 tsp vanilla extract

  • 2 ripe bananas mashed

  • 1/2 c butter (melted)


Preparation

  1. Add oats and shredded coconut to a bowl and mix together well. Put the mixture on a cookie sheet and toast in the oven on the “broil” setting for 4-5 mins until the oats and coconut are slightly toasted. Watch them carefully because they can burn easily in seconds. Take them out and let them cool then place them back in a large bowl.

  2. In a small saucepan on medium heat add your honey, maple sugar, vanilla, butter and mashed bananas.

  3. Heat on the stove until the sweeteners are dissolved and mixed together well, about 3-4 mins

  4. Remove from heat and pour this into the oat mixture. Stir to combine.

  5. Put parchment paper down on a cookie sheet and press bar mixture into the pan.

  6. Add 1/4 c chopped walnuts on top and cook in a preheated oven (350 degrees) for 20-25 mins or until the edges are golden. Let cool

  7. Now place the pan in the fridge for 2-3 hrs, cut into squares and enjoy!

*You can store them at room temperature or also store in the fridge for a longer shelf life
