Apple Pie Granola (refined sugar-free)

After I stopped eating cold cereal I realized that I could make my own homemade cereal from scratch with healthy ingredients that would keep me full and satisfied. This recipe takes about 10 minutes to prepare and 20 minutes to cook, so it's quick to make and quick to consume. It's also great for an afternoon snack!

RECIPE Apple Pie Granola

Ingredients

2 c rolled oats

2 c shredded coconut

½ c sliced almonds

½ c sunflower seeds

½ c pumpkin seeds

¾ c walnuts crushed

1 TBSP pumpkin pie spice

¼ c raisins (make sure there is no added sugar)

¼ c dried apples (no added sugar) chopped

1 stick melted butter

½ c raw honey

1 TBSP vanilla

Preparation

  1. Start by preheating your oven to 325 degrees

  2. Add you oats, coconut, almonds, sunflower seeds, pumpkin seeds, and walnuts to a large bowl and stir.

  3. Add pumpkin pie spice, raisins and dried apples. Mix together

  4. In a small saucepan on medium heat melt your butter, then add your raw honey and vanilla. Remove from heat and stir to combine.

  5. Add the butter/honey mixture to your oat mixture and stir until the granola is evenly coated.

  6. Place a piece of parchment paper onto a large cookie sheet and place granola on the cookie sheet.

  7. Let it cook for about 20 minutes, it should be slightly browned on the top.

  8. Remove from the oven, let cool. It will get crunchy as it cools, making it a delicious granola to have for breakfast! It’s so good, this is the best granola recipe I have ever made, and I’ve been making granola for years!

*Use organic ingredients when feasible

Tips

Try not to over cook it. You don’t want it too brown on top so watch it towards the end of the cooking cycle. If you need to you can stir the granola half way through the cooking time.
